SWEAT AND SOUR MEATBALLS

What you will need:

  • 1 can  (20oz) pineapple chunks
  • 3 T vinegar
  • 1 T  soy sauce ( you can use the low sodium one)
  • 3 T cornstarch (I use the wonder shaker flour)
  • ½ cup of brown sugar
  • 1/3  cup of water
  • 1 large green or red bell pepper ( cut into strips or pieces)
  • 1 batch of meatballs

*I use brown organic rice but you can use regular or white rice

How to do it:

  1. Open and drain the pineapple with putting the juice in a measuring cup
  2. Add enough water to the juice to fill to one cup
  3. Pour into a large fry pan over medium heat.
  4. Add 1/3 cup more of water, the vinegar, soy sauce, brown sugar and corn starch.
  5. Stir until smooth and continue on medium heat until thick. You must keep stirring constantly.
  6. Then add the meatballs and the drained pineapple chunks.
  7. After all ingredients are add, turn the heat to simmer and do not cover.
  8. Cook approximately 20 minutes until it is heated into the meatballs.

*While heating, you may cook your rice if instant if organic, and then it will need to be cook first before starting the sauce.
Pour over the cooked rice and enjoy.
