<p>Pasta and Salad have to be 2 of my favorite foods and when you put them together, watch out!  This is a meal that&#8217;s a big hit with everyone at my house.</p>
<p><strong>What you need:</strong></p>
<ul>
<li>Grilled Chicken <em>(fresh grilled or Tyson ready to eat)</em></li>
<li>Pasta <em>(your choice, just needs to be bit size)</em></li>
<li>Tomatoes <em>(can be canned like some spicy Rotel!)</em></li>
<li>Cucumbers</li>
<li>Onion <em>(white, yellow purple, doesn&#8217;t matter)</em></li>
<li>Bell Peppers</li>
<li>Feta Cheese Crumbles</li>
<li>Pepperccinis</li>
<li>Italian or other oil based dressing</li>
</ul>
<p><strong>How to do it:</strong></p>
<ol>
<li>Prepare your chicken, if needed.</li>
<li>Prepare pasta.</li>
<li>Dice and shop all veggies.</li>
<li>Toss all in dressing.</li>
<li>Enjoy!</li>
</ol>

<p><strong>What you will need:</strong></p>
<ul>
<li>1 can  (20oz) pineapple chunks</li>
<li>3 T vinegar</li>
<li>1 T  soy sauce <em>( you can use the low sodium one)</em></li>
<li>3 T cornstarch <em>(I use the wonder shaker flour)</em></li>
<li>½ cup of brown sugar</li>
<li>1/3  cup of water</li>
<li>1 large green or red bell pepper <em>( cut into strips or pieces)</em></li>
<li>1 batch of meatballs</li>
</ul>
<p>*I use brown organic rice but you can use regular or white rice</p>
<p><strong>How to do it:</strong></p>
<ol>
<li>Open and drain the pineapple with putting the juice in a measuring cup</li>
<li>Add enough water to the juice to fill to one cup</li>
<li>Pour into a large fry pan over medium heat.</li>
<li>Add 1/3 cup more of water, the vinegar, soy sauce, brown sugar and corn starch.</li>
<li>Stir until smooth and continue on medium heat until thick. You must keep stirring constantly.</li>
<li>Then add the meatballs and the drained pineapple chunks.</li>
<li>After all ingredients are add, turn the heat to simmer and <em><strong>do not cover</strong></em>.</li>
<li>Cook approximately 20 minutes until it is heated into the meatballs.</li>
</ol>
<p><em>*While heating, you may cook your rice if instant if organic, and then it will need to be cook first before starting the sauce.<br />
Pour over the cooked rice and enjoy.</em></p>

<p><strong>What you will need:</strong></p>
<ul>
<li>4 pounds of lean ground beef or ground chuck</li>
<li>4 eggs</li>
<li>2 cups of the Italian bread crumbs (store bought are fine)</li>
<li>½ cup finely chopped onion (optional)</li>
<li>1 small can of water chestnuts (optional with onions or to replace them)</li>
<li>2 teaspoons of Worchester sauce</li>
</ul>
<p><strong>How to do it:</strong></p>
<ol>
<li>Beat your eggs in a large bowl followed.</li>
<li>Add remaining ingredients except beef.</li>
<li>Now add your beef.</li>
<li>Mix well and add a little salt and pepper.<br />
*I add a little garlic powder.</li>
<li>Make into 1” firm meatballs and place on a non stick large cookie sheet without touching each other.</li>
<li>Bake on 350 degrees for 15 to 20 minutes.</li>
</ol>
<p><em>*Let them cool.  I put 30 meatballs in each gallon freezer zip lock bag.  Then wrap with freezer paper,  label and date. You should have four frozen bags depending on the size or your meatballs and if you choose to put less or more in the bags.</em></p>
